Garlic and Scorpion chilli. One is extremely useful at dinner. The other has rather different intentions. This smooth, cantina-style salsa has a savoury garlic character running through it, but the Scorpion pepper is very much waiting for its turn. The result is rich and punchy, with a serious chilli bite that builds beyond the first taste. I’d put this to work with tacos, burritos, nachos and grilled meats, although a bowl of tortilla chips would probably disappear rather quickly too. The garlic makes it feel substantial enough to use with proper food rather than treating it as a novelty heat source. Smooth, savoury and decidedly hot. The sort of salsa that makes you reach for another chip while quietly questioning your judgement.
