There are hot sauces that arrive looking for attention, and then there are sauces that quietly get on with the job. Salsa Huichol Negra belongs firmly in the second camp. Made in Nayarit on Mexico’s west coast, this is the darker member of the Huichol family. It brings a balanced chilli heat with a deeper, more savoury character that makes it remarkably easy to use. This is not a sauce you need to save for some grand Mexican feast. Pour it over eggs, tacos or grilled meat. Splash it onto seafood. Put it beside a plate of crisps and see what happens. Frankly, I suspect the bottle will become a permanent fixture on the table. No artificial ingredients. No unnecessary theatrics. Just a proper Mexican table sauce with enough character to make everyday food considerably less boring. And we all know how I feel about boring.
