Árbol and piquín peppers provide the chilli character, while vinegar keeps everything bright and punchy. The result is savoury, tangy and unapologetically garlicky. The heat won’t frighten anyone who has wandered too far down the HSE shelves, which is precisely why this works so well as an everyday sauce. You can actually pour it on without needing to sign a waiver. Eggs are an obvious choice. Pasta is another. Try it with crispy potatoes, chicken, kebabs or wings. And apparently popcorn. I was sceptical about that one, but science demands that we investigate these matters. If you like garlic, this bottle deserves table space. If you don’t, I suggest we don’t discuss it further.
